Beetroot & Walnut Salad with Feta and Rocket

This vibrant beetroot salad harnesses the power of purple foods, packed with antioxidants and fibre that support gut health, liver detoxification, and heart health. Beetroot & Walnut Salad with Feta and Rocket Serves: 2–3
Prep time: 10 minutes (plus cooking time for beetroot if not pre-cooked)
Ingredients:
2 medium beetroots (roasted or boiled, peeled, sliced or diced)
2 cups fresh rocket (arugula)
1/3 cup walnuts, roughly chopped and lightly toasted
100g feta cheese, crumbled
1 small red onion, thinly sliced
1 tbsp fresh parsley, chopped (optional, for freshness)
Dressing:
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar or lemon juice
1 tsp Dijon mustard
1 tsp honey or maple syrup (optional, balances acidity)
Salt and freshly ground black pepper, to taste
Instructions:
Prepare the beetroot: If using raw beetroot, roast in the oven at 180°C (350°F) wrapped in baking paper for about 45-60 minutes until tender. Alternatively, boil until soft. Allow to cool, then peel and slice or dice.
Toast the walnuts: In a dry pan over medium heat, lightly toast walnuts for 3-4 minutes until fragrant. Remove from heat and let cool.
Make the dressing: Whisk together olive oil, apple cider vinegar or lemon juice, Dijon mustard, honey (if using), salt, and pepper until emulsified.
Assemble the salad: In a large bowl, toss the rocket, beetroot, red onion, and parsley. Drizzle with dressing and toss gently to coat evenly.
Serve: Sprinkle toasted walnuts and crumbled feta on top. Serve immediately or chilled.
